Get ready to embark on a culinary journey with Back 2 Basics Cooking! "Flavors of Italy" is the first stop in our Culinary Passports series, where we explore the rich traditions and unique flavors of cuisines from around the world. This interactive, hands-on class allows you to experience Italy’s diverse culinary regions while developing your skills in the kitchen.

What’s on the Menu?

​

Transport your taste buds to Northern Italy with a thoughtfully crafted three-part meal:

  • Main Dish: Osso Buco – A hearty and tender braised beef shank from Lombardy, brought to life with a rich sauce and a bright gremolata.

  • Side Dish: Risotto alla Parmigiana – A creamy and elegant Parmesan risotto that pays homage to the culinary expertise of Parma.

  • Dessert: Affogato – A simple yet luxurious treat of gelato paired with freshly brewed espresso, perfect for ending the evening on a high note.

What to Expect

Held in a professional commercial kitchen, this 2-hour class is designed to be fun, interactive, and educational. You’ll cook in pairs (2 people per station) with only 8 students total, making it easy to collaborate and stay engaged as you prepare this incredible meal.

  • Warm Welcome
    Meet your instructor, Chef Fumi, an MD with a passion for teaching and a wealth of self-taught culinary knowledge. Chef Fumi will guide you through the evening’s menu while sharing fascinating insights into Italian cuisine and cooking techniques. Chef Fumi is only partnering with us for a limited time, making his classes a unique and special opportunity!

  • Hands-On Cooking
    You’ll jump right into the action and learn techniques to elevate your cooking at home. Highlights include:

    • Crafting a perfectly blended and reduced sauce for Osso Buco.

    • Toasting and stirring Arborio rice to achieve the creamy consistency of risotto.

    • Practicing knife skills with confidence and ease as you prep fresh aromatics and vegetables.

    • Perfecting plating and presentation for a professional finish, especially for the dessert Affogato.

    • Aprons are provided for use during the class to keep you looking sharp as you cook!

Enjoy Your Creations
Once cooking is complete, you’ll clean your station as a group and then relax on stools to eat your creations. The format encourages conversation and additional opportunities to ask Chef Fumi any culinary questions while savoring your meal. â€‹But don't worry, we will take care of the dishes!​

Beverage Details

To enhance your experience, we’ll email an optional wine pairing suggestion for the menu ahead of the class for those 21 and up. While we don’t serve alcohol, guests 21 and over are welcome to bring their favorite beer, wine, or bubbly to enjoy with their meal (please, no hard liquor). We encourage everyone to drink responsibly and plan for a safe way home. Alcohol-free beverages are also welcome, and bottled water will be provided for your enjoyment during the evening.
